ZUCCHINI

  • Zucchini is a long, cylindrical vegetable, slightly smaller at the stem end, usually dark green in color. The flesh is a pale greenish-white and has a delicate, almost sweet flavor.
  • Zucchini is a multifunctional squash; you can fry them, sauté them, use a vegetable peeler to turn zucchini into “pasta ribbons”, or even enjoy them raw.

  • Hypertension fighter: Zucchini has a good amount of potassium: 295 milligrams per cup, or 8% of your recommended daily value. According to the American Heart Association, potassium can help control blood pressure because it lessens the harmful effects of salt on your body.
  • Heart-healthy: Studies suggest boosting your potassium intake (while also curbing sodium) can slash your stroke risk and may also lower your odds of developing heart disease. One cup of sliced zucchini has 20 milligrams of vitamin C, or about 33% of the recommended daily value. Vitamin C helps the lining of your blood cells function better, lowering blood pressure and protecting against clogged arteries.
