  • Not Napa as in the famous valley in California – this “napa” comes from the colloquial Japanese nappa, referring to the leaves of any vegetable. Napa is a type of Chinese cabbage originating near the Beijing region of China.
  • Napa cabbage is widely used in East Asian cuisine in both cooked and raw applications. Give this simple Napa cabbage slaw a try for your next meal: chop the cabbage into very thin strips and add scallions, chili, julienned carrots, and other vegetables of your choice. Top the slaw with a dressing of sesame oil, soy sauce, salt, and pepper. Mix well and serve cold.
