Garlic Mushroom and Tomato Tart Recipe

This garlic mushroom and tomato tart feels fancy but is easy to make. With earthy mushrooms, sweet tomatoes, and a creamy filling in a flaky crust, it’s perfect for a cozy dinner or brunch.
Ingredients
For the Crust:
- 1 1/4 cups all-purposeව
- 1/2 cup cold butter, cubed
- 1/4 tsp salt
- 3-4 tbsp ice water
For the Filling:
- 8 oz mushrooms (cremini, shiitake, or portobello), sliced
- 1 small onion, thinly sliced
- 2-3 garlic cloves, minced
- 1 cup heavy cream
- 2 large eggs
- 1 tsp fresh thyme or rosemary, chopped
- 1-2 ripe tomatoes, thinly sliced
- 1/2 cup shredded cheese (gruyère or cheddar, optional)
- 2 tbsp olive oil
- Salt and pepper to taste

Step-by-Step Instructions
Step 1: Make the Crust
Mix flour and salt. Cut in cold butter until crumbly. Add ice water, 1 tbsp at a time, until dough forms. Shape into a disc, wrap, and chill for 30 minutes.
Step 2: Prep the Veggies
Heat 1 tbsp olive oil in a skillet over medium heat. Cook mushrooms for 5-7 minutes until golden. Season and set aside. In the same pan, add 1 tbsp oil and cook onions for 15 minutes until caramelized. Add garlic for the last minute. Cool slightly.
Step 3: Roll Out the Dough
Preheat oven to 350°F (175°C). Roll out dough to fit a 9-inch tart pan. Press into pan, trim excess, and prick bottom with a fork. Line with parchment and pie weights (or dry beans). Bake for 15 minutes, remove weights, and bake 5 more minutes.
Step 4: Make the Filling
Whisk eggs, cream, thyme or rosemary, salt, and pepper until smooth.
Step 5: Assemble the Tart
Spread mushrooms, onions, and garlic over the crust. Pour egg-cream mixture over, shaking gently to settle. Arrange tomato slices on top and sprinkle with cheese if using.
Step 6: Bake
Bake for 35-40 minutes until the filling is set with a slight wobble. Cool for 5-10 minutes before slicing.

Serving Suggestions
- Serve warm or at room temperature with a green salad and vinaigrette.
- Pair with a chilled Sauvignon Blanc.
- Drizzle with herb-infused olive oil for extra flavor.
Tips and Storage
- Use a mix of mushrooms (cremini, shiitake, portobello) for depth.
- Store leftovers covered in the fridge for up to 3 days. Reheat in the oven.
- Discard if the filling becomes watery or smells off.
