Garlic Chili Oil Recipe
Posted by Niel Neethling on 15 February 2026
Garlic chili oil is one of those pantry staples that instantly makes food more exciting. It’s spicy, savoury, and deeply aromatic, with crispy bits of garlic that add texture as well as flavour.
This garlic chili oil recipe is inspired by classic Asian condiments, but made approachable for home kitchens. Using fresh garlic and chilies gives the oil a cleaner, brighter heat compared to store-bought versions.
What Is Garlic Chili Oil?
Garlic chili oil is a condiment made by gently frying garlic and chili flakes in hot oil. The process infuses the oil with flavour while creating crisp garlic pieces that can be spooned over almost anything.
Ingredients
- 1 cup neutral oil (sunflower or canola)
- 6 cloves fresh garlic, finely sliced
- 2 tablespoons chili flakes or dried chilies
- 1 teaspoon smoked paprika (optional)
- ½ teaspoon salt
How to Make Garlic Chili Oil
Heat the oil in a small saucepan over medium-low heat. Add the garlic and cook gently until lightly golden, stirring frequently to prevent burning.
Remove from heat and immediately stir in the chili flakes, salt, and paprika if using. The residual heat will bloom the spices without making them bitter.
Allow the oil to cool completely before transferring to a clean jar.
How to Use Garlic Chili Oil
- Spoon over noodles or fried rice
- Serve with dumplings or spring rolls
- Drizzle over roasted vegetables
- Add to soups for extra heat
Storage Tips
Store garlic chili oil in an airtight container in the refrigerator for up to 2 weeks. Always use a clean spoon to maintain freshness.
