- 4 large FAVE Jumbo Carrots
- 2 FAVE Shallots, thinly sliced
- ¼ cup fresh parsley, chopped
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra virgin olive oil
- 1 teaspoon honey (optional)
- Salt and pepper, to taste
How to Make Raw Carrot Salad
Peel the carrots and grate them or cut them into fine matchsticks or thin half-moons, depending on your preferred texture.
Thinly slice the shallots and chop the parsley.
In a large bowl, combine the carrots, shallots, and parsley.
