How to Make Raw Carrot Salad

Peel the carrots and grate them or cut them into fine matchsticks or thin half-moons, depending on your preferred texture.

Thinly slice the shallots and chop the parsley.

In a large bowl, combine the carrots, shallots, and parsley.

In a separate small bowl, whisk together the lemon juice, olive oil, honey (if using), salt, and pepper until well combined.
