Garlic Hummus and Veggie Sticks

This garlic hummus is creamy, tasty, and pairs perfectly with crunchy veggie sticks. It’s a simple, healthy snack that’s packed with protein, fiber, and healthy fats, making it ideal for any gathering or quick bite.

Ingredients
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2-3 garlic cloves, minced
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp olive oil, plus extra for drizzling
  • 1/2 tsp cumin
  • Salt to taste
  • 2-3 tbsp water (to adjust consistency)
  • Veggies for dipping: carrot sticks, cucumber slices, bell pepper strips, celery, or cherry tomatoes

Step-by-Step Instructions

Step 1: Prep Chickpeas

For extra-smooth hummus, peel the skins off the chickpeas (optional but recommended).

Step 2: Blend Tahini and Lemon

In a food processor, blend tahini and lemon juice for about 1 minute until creamy.

Step 3: Add Seasonings

Add minced garlic, cumin, and a pinch of salt. Blend briefly to combine.

Step 4: Add Chickpeas

Add chickpeas and pulse until the mixture starts to come together. Scrape down the sides as needed.

Step 5: Adjust Consistency

With the processor running, drizzle in olive oil, then add water 1 tablespoon at a time until smooth.

Step 6: Taste and Serve

Taste and adjust with more lemon, garlic, or salt. Scoop into a bowl, drizzle with olive oil, and sprinkle with paprika or parsley.

Step 7: Prep Veggie Sticks

Wash and slice veggies into dippable pieces (sticks or strips for carrots, cucumbers, and bell peppers; keep cherry tomatoes whole). Arrange around the hummus.

  • Add cayenne for heat or roasted red peppers for a smoky flavor.
  • Store hummus in an airtight container in the fridge for 4-5 days, with plastic wrap pressed on the surface.
