Ingredients
- 1/2 cup carrots, peeled and sliced

- 1 cup Fave™ Snow Peas, trimmed
- 2 teaspoons Fave™ Garlic, minced
- 1 teaspoon Fave™ Ginger, minced
- Salt and pepper to taste
For the Sauce
- 1/4 cup vegetable broth (or chicken broth, or water)
- 1/4 cup soy sauce
- 3 tablespoons honey
- 2 teaspoons cornstarch
Instructions
- Prepare the Vegetables: Begin by prepping all the vegetables. Make sure to peel and slice the carrots, trim the snow peas, and slice the bell peppers.
- Cook the Carrots and Mushrooms: Heat a tablespoon of oil in a large skillet or wok over medium-high heat. Add the sliced carrots and mushrooms, cooking them for about 4-6 minutes until they start to soften. Stir frequently to prevent sticking.
- Add Remaining Vegetables: Once the carrots and mushrooms are slightly tender, toss in the bell peppers, snow peas, broccoli, water chestnuts, and baby corn. Add 2 tablespoons of water to the pan and cook the vegetables for an additional 3-5 minutes. Stir occasionally until all vegetables are tender, and most of the water has evaporated.
- Add Garlic and Ginger: Stir in the minced garlic and ginger, cooking for 30 seconds until fragrant. Season the vegetables with salt and pepper to taste.
- Prepare the Sauce: While the vegetables cook, whisk together the vegetable broth, soy sauce, and honey in a small bowl.
- Combine Vegetables with Sauce: Pour the sauce over the cooked vegetables, allowing it to simmer for about 30 seconds so the flavors meld together.
- Thicken the Sauce: In a separate small bowl, mix 2 teaspoons of cornstarch with a tablespoon of cold water. Stir this mixture into the pan and bring it to a boil. Let it cook for an additional minute until the sauce thickens slightly and coats the vegetables.
