These Ginger Chicken Salad Wraps are perfect for International Picnic Day, combining juicy chicken, zesty ginger, and crunchy veggies in a portable wrap. Ideal for a sunny outdoor meal, they’re easy to make and packed with vibrant flavors.

Ingredients (Makes 4 wraps)
  • 2 cups cooked chicken breast, shredded or sliced
  • 1 cup snap peas, sliced thin
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 2 cups fresh spinach or lettuce
  • 2 tbsp fresh ginger, grated
  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp sesame seeds (optional, for a nutty crunch)
  • 4 wraps of your choice (we used green spinach wraps!)
  • Salt and pepper to taste
Step-by-Step Instructions

Step 1: Marinate the Chicken (Optional)

If using raw chicken, mix grated ginger, soy sauce, olive oil, and honey in a bowl. Add the chicken and marinate for 20-30 minutes (or up to 2 hours in the fridge). Grill or cook until done, then slice or shred. For pre-cooked chicken, toss with the marinade ingredients for a quick flavor boost.

Step 2: Prep the Veggies

Slice the snap peas, shred the carrots, and finely shred the red cabbage. Rinse the spinach or lettuce and pat dry.

Step 3: Assemble the Wraps

Lay a wrap flat. Add a handful of spinach or lettuce, then layer on some chicken, snap peas, carrots, and red cabbage. Sprinkle with sesame seeds if desired.

Step 4: Roll It Up

Fold the bottom of the wrap up, tuck in the sides, and roll tightly to keep everything together.

Step 5: Pack for the Picnic

Wrap each in parchment paper or foil to stay fresh. Store in a cooler with an ice pack to keep crisp until picnic time.
